Rogan Josh

20 ml oil
500 g meat of choice (beef, chicken, or lamb)
3 bay leaves
1 stick cinnamon
3 cloves
1 diced onion
2 tablespoon Ginger & Garlic (or fresh Ginger and Garlic cloves)
1 teaspoon each of Kit 4 Curry Recipe Pack 1, 2, 3 and 4 (Add more heat with an extra teaspoon of #4)
1 cup milk
1 teaspoon of ground nutmeg
Salt and pepper
250 ml plain yoghurt
Fresh Coriander
2 diced tomatoes (or a can of tomatoes)
  1. Heat oil in a large pan and brown the lamb in batches. Set aside.
  2. In the same pan, fry the bay leaves, cinnamon, cloves and onion until the onion is soft and translucent. Add the garlic and ginger and fry for a further 2 mins. Add 1 teaspoon each of Kit 4 Curry Recipe Pack 1, 2, 3 and 4 (add more heat with an extra teaspoon of #4) and fry for another 3 mins.
  3. Now add the cup of milk, nutmeg and stir.
  4. Add yoghurt and cook till oil separates from gravy.
  5. Reduce heat and simmer for 5 minutes.
  6. Best served with fresh coriander and rice of your choice.
  7. Salt and pepper to taste.
